I have always loved the taste of lamb, especially if it is cooked in a mediterranean restaurant. Cooking lamb at home is quite simple and grilling it brings the best flavors out of the meat.
Whether it's a rack of lamb, lamb chops or lamb loins; I use this recipe for all of them. I prepare this on my Big Green Egg but you can also make this on the grill or in a skillet on the stove.
I prefer to use a rack of lamb over the lamb loins but usually get what I can find on sale.
One time I went to the grocery store and they didn't have any lamb chops cut but there was an lamb rib rack available that was already frenched. I asked the butcher if he could cut the chops for me or show me how to cut them myself. He kindly cut half of the rack and showed me how to do so so that I could slice the rest of the rack at home myself. It was easier than I had thought. note: you save a bit of money buying the rack of lamb versus already cut lamb chops.
Grilled Lamb Recipe
Rack of Lamb, Lamb Chops or Lamb Loins
Extra Virgin Olive OIl (EVOO)
Kosher Salt and Pepper

Drizzle EVOO over lamb.
• two •
Season with Kosher Salt and Pepper.
• three •
Bring Big Green Egg to 375 degrees.
• four •
Cook direct until internal temperature reaches 140 degrees and let rest until serving.

Serve with grilled vegetables, tzatziki, naan or whatever you fancy.
